Ingredients (for 4 servings):
For cream:
• 2 cups raw cashews
• 1 cup soy yogurt
• 1/2 cup agave
• 1/4 cup fresh lemon juice
• 1/8 tsp salt
For base/granola:
• 1 cup rolled oats
• 1/8 cup agave
• 1 tb coconut sugar
• 1 tsp cinnamon
*or you can use store-bought granola.
Topping ideas: Fresh or frozen fruit, nuts, seeds, crumbled vegan biscuits, etc.
Instructions:
For cream:
1. Blend all the cream ingredients in a high speed blender until smooth and creamy.
For base:
1. Preheat oven to 150°C.
2. Add all base ingredients to a bowl and mix very well to combine.
3. Transfer to a baking tray lined with baking paper.
4. Bake for 10 minutes, toss and bake for 10 minutes more.
5. Let cool.
To assemble:
1. Divide the granola between the 4 bowls.
2. Divide the cream between the 4 bowls.
3. Place in the fridge to chill.
4. Before serving add toppings of choice.
